What insurance and documentation should I expect?

Ask for public liability cover, employer’s liability where staff are employed, relevant competence evidence, method statements and risk assessments where the site requires them, and confirmation of anyone working at height. Check them yourself rather than assuming — that is the contractor’s relationship with you, not ours.

Can we set up regular subcontract work?

That is between you and the contractor once you have worked together and it has gone well. Our part is making the first introduction sensible. If repeat work is what you are after, say so, because it changes who is likely to be interested.
